The diets of most North Americans and Europeans have dramatically changed over the last thirty years. Refined vegetable oil, specifically soybean oil, is now being used in most snack foods, breads, sweets, and processed foods to such an extent approximately 20% of the total caloric intake is estimated to come from this source alone.
Why is this so dangerous for our health?
Refined vegetable oil, like soybean oil, is an omega 6 fatty acid. Our body needs fats to survive, but many nutritional experts believe that to achieve optimal health humans need to balance their fat intake between omega 6 fatty acids, derived from seeds and nuts, and omega 3 fatty acids, primarily found in the fat of cold water fish such as salmon, sardines, herring, and mackerel. Today instead of a 1:1 balanced intake of omega 6 and omega 3 fatty acids, most western diets consume between a 10:1 to a 50:1 ratio of omega 6 to omega 3 fatty acids. Changing that ratio is the best thing we can do to change the future of our health today.
Increased omega 6 intake can be attributed to obesity, depression, hyperactivity, and possibly even violence. Omega 6 fatty acids increase inflammation at the cellular level, which may explain the rise in hypertension, heart disease, certain types of cancers, asthma, and cognitive degenerative diseases. Omega 3 fatty acids on the other hand are precursors for anti-inflammation agents and help counterbalance the negative effects from the high levels of omega 6 fats we consume every day in our diets.
Omega 3 is a type of essential fatty acids and our bodies do make them on our own. We have to obtain the necessary amounts from our diets. However, since the chief source of omega 3 fatty acids is cold water fish, the average person would need to consume approximately four pounds of fresh fish per day to receive the same health benefits from two grams of a superior omega 3 fish oil supplement.
Simple changes to our diets to reduce our omega 6 fatty acid intake may be difficult due to the wide ranging use of soybean oils in processed foods. The best bet to reduce your omega 6 fatty acid intake is to avoid processed foods in favor of freshly prepared meals. Increase your fish intake and start taking a superior omega 3 fish oil supplement to help balance your bodies need for essential fatty acids.

What can you do now to begin experiencing more joy on the road to improved diet and lifestyle?
1. Begin by Crowding Out - Rather than follow the urge to start by discarding everything from your kitchen and pantry that you have labeled “wrong” or “bad” - first allow yourself to begin to explore new foods that are healthy and delightful.
Over time you can incorporate more of the new foods that you find particularly appealing into your diet. These new introductions will begin to take the place of or “crowd out” the less desirable foods that have not been working to create vibrant health for you.
If you begin by removing all of the foods that you feel that you shouldn’t be eating without a suitable and enjoyable replacement, often it will only be a matter of time before the same foods that you used to rely on are back where they used to be.
2. Reorient Meal Preparation Time to Celebration Time - It’s high time to forget about obsessing about creating the perfectly plated meal or trying to equal anything possible by a Top or Iron Chef. Relax. Have fun. Burn a few meals - laugh a lot. Return music to the kitchen and laughter to the table. As you’ll recall, the best meals are most often ones where the company and the atmosphere fed you as much as the food. So light up some candles for no good reason, buy a bouquet although your birthday has already come and gone, and allow yourself to be reminded what true nourishment is really about.
3. Eat as close to the land as you can - Aim to do the majority of your shopping in and around the produce area - despite invitations by your grocer to focus all of your healthy shopping efforts in marked “health food” aisles, often falsely so called. Eating foods in their natural state as often as possible allows your body to receive a wonderful bounty of nutrition that has not been processed and denatured by high-tech refinery or adulterated by artificial ingredients. As Renee Loux says in her book, The Balanced Plate “the intelligence of naturally occurring foods is that all of the necessary elements and catalysts are consistently present. Our bodies immediately recognize the nutritive value of whole foods and know how to process them effectively.” And the best part is how much of it there is for you to enjoy. Just take a look!
4. Find a Few Delicious Ways to Be Really Good to Yourself - Taking time for self nurture can seem at first blush like a mere triviality - something that may be a good idea but not at all mandatory, but you would do well to think again. Hold off too long from allowing yourself to be supported, encouraged, nurtured and looked after and I wouldn’t be surprised to find you late one night standing before an open refrigerator door searching for an answer you will not find there. This is a must. Add it to the schedule, block out when and where, cancel all else and become mysteriously unavailable. This is the proverbial application of the oxygen mask to yourself before attempting to administer it to others. Fill a bathtub with warm water, essential oils, and Epsom salts; get lost on a nature retreat; read poetry to yourself from Shel Silverstein’s Where the Sidewalk Ends; play Andrea Bocelli with the curtains drawn in a still house; revel in silence; invigorate with dance; do what pleases you.
